Simple Johnny Cake Recipe

I love Johnny Cake! It's Caribbean bread. I am sharing my version of my mother's recipe adapted from the ingredients I have on hand here.

Ingredients

  1. 2 Cups of Flour or 250 g (makes 8 to 12 depending on how big you make them)
  2. A glass of water mixed with a 1/4 tablespoon of salt
  3. 4 tbs of room temperature butter ( leave out 8 to 4 hours to soften butter)
  4. 1tbs of grape seed oil or less (or another type of oil of your choosing)
  5. Baking powder (Omit this if you are using self-rising flour)
Mix the flour, butter, and oil together and add water little by little to combine the batter until it is no longer sticky. 

Add flour as needed if the mixture is still sticky or if you added too much water.

Once the dough is formed, form a tube shape and leave rest for at least 30 minutes under a kitchen towel or/and with a cover.
After the first rest, break the tube into pieces knead them, and roll them into a ball.
Leave them to rest again for 1 hour. Smile, you're almost done!
On a flat, clean, and floured surface, flatten the rolls into a circle with a rolling pin or a bottle or your hand if you have none.
Bake for 20 min (time depends on your oven) at 180 °C or 350°F.
