2 Cups of rice of your choice
2 and a half cups of water
1 pot spoon of olive oil
3 cloves of garlic
Chicken (already cooked will go faster. uncooked still works)
Canned mixed vegetables or fresh ones if you have them on hand
Salt
Cayenne Pepper
Tomato paste
Onions and bell peppers as you desire or optional
Add Olive oil to the pot and turn on the stove. Drop in the onions, bell peppers, and garlic to simmer.
If your chicken is not cooked add it here until it is cooked. Add your fresh or canned veggies if the chicken is already cooked in place of the raw chicken.
Add the water and cover the pot. Bring to a boil.
Add rice in. Add tomato paste to your liking (two spoons for me). Add salt and cayenne pepper.
Taste the water. Best be not salty enough than too much. You can add salt but you can't remove salt unless you plan on adding more water to the mix.
Let it boil on medium to high heat while mixing every few minutes until water evaporates to half then lower heat and keep it up until all water is evaporated.
